zelda's cheesey meatloaf
I hope you like this recipe, there are so many meatloaf recipes on here but mine might be a little different. This is my family's favorite way of having it.

Ingredients
- 3 pounds ground chuck [80-20]
- 1 large onion, chopped
- 1/2 large bell pepper, chopped
- 3 large eggs
- 1/3 cup ketchup
- 1/3 cup fresh garlic or granulated garlic
- 1 teaspoon salt and pepper
- 1/4 cup cumin, ground
- 1 tablespoon adobo
- 1 cup bread crumbs, italian
- 1-1 1/2 cups grated chesse [cheddar,jack, mozzerella]
- TOPPING FOR MEATLOAF
- 1/3 cup regular mustard
- 1/2 cup ketchup
- 1 cup brown sugar

Step 1Combine the first 10 ingredients and mix them very well. Form into a loaf then make a well the whole length of the meatloaf. Put Chesse in the well and then close the well. Bake at 350 degrees for 45 minutes. Then mix the three ingredients and pour all over the meatloaf and bake another 15 minute. Sometimes I add 1 pound of pork to it and I wrap it in bacon sometimes. Still pour the sauce over the last 15 minutes of cooking. It is really good.
