wumkees (individual meat loaves)
I created this recipe in the late 1970's to steer away from the traditional meat loaf baked in the oven. This is stove top and far easier. For some reason, my late Dad called them "Wumkees".

Ingredients
- 8 ounces stewed tomatoes
- 1/2 cup beef broth (divided)
- 1-1/2 pound ground beef, turkey or pork
- 1/2 cup italian bread crumbs
- 1/2 cup parsley flakes
- 1 - egg, beaten
- 1/4 cup red onion, finely chopped
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup water
- 1 teaspoon dijon mustard
- 1/2 cup barbecue sauce
How To Make wumkees (individual meat loaves)

Step 1Combine tomatoes and1/4 cup broth with meat, bread crumbs, parsley, egg, onion and seasonings in large bowl. Mix thoroughly.

Step 2Shape into four individual meat loaves.

Step 3In large skillet, heat olive oil over medium heat. Brown loaves on all sides.

Step 4COVER; simmer 25 minutes; spoon out fat.

Step 5Add remaining broth, water and mustard to skillet. Stir.

Step 6Cook, UNCOVERED, 10 minutes. Stir sauce now and then.

Step 7Brush tops of loaves with your favorite barbecue sauce (if desired).
