weeknight leftover taco salad

I know its hard to work, take care of a family & somedays still make dinner. Trust me I know how you all feel. After working a full 8 hrs aday then coming home to take care of my Uncle & the house. Making dinner can just be sometimes over willing. But one trick I have come up with is making meals a head of timeor using what ever leftovers I have handy. This is one of many leftover meals. My Uncle loves them... :)

Ingredients

  • 4 - flour tortillas (8 inch)
  • 1 pound ground beef
  • 1 package taco seasoning mix
  • 4 cups shredded lettuce
  • 1 cup kraft mex style shredded four cheese
  • 1 large tomato, chopped
  • 1/4 cup ranch dressing

How To Make weeknight leftover taco salad

  • Step 1
    heat the oven to 425F. Crumple 4 large sheets of foil to make 4 (3 inch) balls. Spray with cooking spray. Drape tortillas over them. Bake 6 to 8 minsor until tortillas are golden brown.
  • Step 2
    Re-warm up any already cooked ground beef with taco seasoning mix as firected on the package.
  • Step 3
    Fill each shell with lettuce,meat mixture, cheese & tomatoes just before serving. Drizzle with dressing.
  • Step 4
    Note: I make this about the same week I make meatloaf for dinner. Always leftover meatloaf. Here is my second meal out of 1 meal.
