weeknight leftover taco salad
I know its hard to work, take care of a family & somedays still make dinner. Trust me I know how you all feel. After working a full 8 hrs aday then coming home to take care of my Uncle & the house. Making dinner can just be sometimes over willing. But one trick I have come up with is making meals a head of timeor using what ever leftovers I have handy. This is one of many leftover meals. My Uncle loves them... :)

Ingredients
- 4 - flour tortillas (8 inch)
- 1 pound ground beef
- 1 package taco seasoning mix
- 4 cups shredded lettuce
- 1 cup kraft mex style shredded four cheese
- 1 large tomato, chopped
- 1/4 cup ranch dressing
How To Make weeknight leftover taco salad

Step 1heat the oven to 425F. Crumple 4 large sheets of foil to make 4 (3 inch) balls. Spray with cooking spray. Drape tortillas over them. Bake 6 to 8 minsor until tortillas are golden brown.

Step 2Re-warm up any already cooked ground beef with taco seasoning mix as firected on the package.

Step 3Fill each shell with lettuce,meat mixture, cheese & tomatoes just before serving. Drizzle with dressing.

Step 4Note: I make this about the same week I make meatloaf for dinner. Always leftover meatloaf. Here is my second meal out of 1 meal.
