I just made this for a church pot luck. I used some fresh vegetables and some canned goods like the chili beans. It came out pretty good.

Ingredients For vegetable hamburger soup

    green beans, fresh
  • 2 1/2 c
    carrots fresh cut into rounds
  • 1
    green bell pepper

    yellow bell pepper
  • 1
    red bell pepper
  • 1 1/2 lb
    80/20 ground chuck
  • 1 sm
    videlia onion
  • 2 md
    ears of fresh corn bi-color, cut off cob
  • 1 1/2 tsp
    seasoning salt
  • 4
    boullion cubes
  • 1 tsp
    fresh ground pepper
  • 1 tsp
    chili powder
  • 1 can
    condensed tomato soup
  • 1 can
    chili beans
  • 1 tsp
    italian seasoning
  • 4 Tbsp
    salted butter

How To Make vegetable hamburger soup

    Peel and cut carrots, put in cold water in saucepan, set on to boil. Take ends off fresh silver lake green beans, cut into one inch pieces,put into sauce pan with water, set on to boil. Once boiling add one beef boullion cube. Add the second cube in each pot once vegetables are tender. Do not drain water off vegetables.

    Melt butter in fry pan. Dice up peppers, and onion, put in frypan with melted butter. Cook till starting to brown add italian seasoning, pepper, and seasoning salt to hamburger cook meat till brown. Drain almost all of the fat off.

    Dump carrots water and all in a crockpot. Do the same with the green beans. Add chili beans and can of tomato soup. Add corn cut off the cob cooked from a previous meal. Stir all well add chili seasonning. Drain most of the fat off the hamburger. Add hamburger, pepper, onion mixture to the vegetables. Heat on high for 20 minutes, adjust to low for an hour or so more. Serve with garlic bread will make a great meal.
