  • 1 small chopped onion
  • 16 ounces tomatoes, quartered
  • 1/2 cup rice
  • 1/4 cup soy sauce
  • 1.5 teaspoons basil

How To Make vegetable-beef casserole

  • Step 1
    Crumble beef in 9-inch square microwave-safe baking dish; sprinkle with garlic.
  • Step 2
    Cover; microwave on high 3 minutes.
  • Step 3
    Meanwhile, cut zucchini in half lengthwise, then crosswise into 1/4-inch slices.
  • Step 4
    Add zucchini, onion, tomatoes, rice, soy sauce, basil and 1/2 cup water to ground beef, stirring to combine.
  • Step 5
    Cover and microwave on high 27 minutes, or until rice is tender; stir frequently.
