One of my favorite individual meat loaf recipes! My Dad gave it to me many years ago.

Ingredients

1 lb
ground turkey
1 lb
ground beef
2 large
eggs, beaten
1 small
zucchini, shredded
1 c
fresh bread crumbs
1 1/2 tsp
salt
1/2 tsp
coarsely ground black pepper
1 Tbsp
butter
1 medium
onion, chopped fne
2 clove
garlic, crushed (more if you like it)
1 tsp
italian seasoning for extra flavor (opt)

How to Make Traditional Meat Loaves

Step-by-Step

  • 1Preheat Oven to 400. Line 15 1/2 x 10 1/2" jelly roll pan with parchment paper or foil. (I use my half-sheet pan also.)
  • 2In nonstick skillet (12") heat butter over medium heat. Add chopped onion and cook till tender. Add garlic & cook a minute longer.Cool a little.
  • 3In large bowl (with your hands) mix turkey, beef, eggs, zucchini, bread crumbs, salt and pepper. Add cooked onion mixture and combine thoroughly.
  • 4Shape into 4 1/2" x 2 1/2" loaves. Bake 25-35 minutes at 400 till browned on the ouside.I use my Weight Watcher's 1/2 cup measure serving spoon to get just the right size.
