three bean chili

Tonight was my first time making chili, so it was certainly a learning experience! I got the recipe on this site, and even with modifications it was MUCH too spicy for my fiance and small children! So this is my adapted recipe to suit my family's tastes. :)

Ingredients

  • 2 cans (15oz size) black beans
  • 2 cans (15oz size) red kidney beans
  • 2 cans (15oz size) pinto beans
  • 2 cans (7oz size) diced tomato & green chile
  • 2 cans (small) tomato paste
  • 28 ounces tomato sauce
  • 2 - red bell peppers, diced
  • 1 - yellow onion, diced
  • 14 ounces diced green chiles
  • 1 tablespoon minced garlic
  • 1 teaspoon oregano
  • 1 tablespoon cumin
  • 3 tablespoons chili powder
  • 1 tablespoon olive oil
  • 2 cups water
  • 2 cans sweet corn

How To Make three bean chili

  • Step 1
    Drain & rinse beans & corn. Set aside.
  • Step 2
    In large stock pot: sautee onions, garlic & bell pepper in 1 tbsp oil.
  • Step 3
    Add tomato sauce, tomato paste & 2 cups water. Stir.
  • Step 4
    Add spices. Mix well.
  • Step 5
    Add diced tomato & green chile - include liquids. Add green chiles. Stir.
  • Step 6
    Add beans, mix well. Move to crock pot & cook on low for 4 hours.
