This is a great mexican meal. It's fast and easy to make, I never have leftovers .

Ingredients For texas lasagna

  • 1 1/2 lb
    ground beef
  • 1
    med. onion chopped
  • 1 tsp
    salt
  • 1 pkg
    taco seasoning mix
  • 1 can
    (15 oz )chopped tomatoes
  • 1 can
    ( 15 oz ) tomatoe sauce
  • 2 c
    ( 16 oz ) small curd cottage cheese
  • 2
    eggs
  • 12
    corn tortillas
  • 4 c
    shreded monterary jack cheese or mexican blend cheese
  • 1 can
    ( 4 oz ) chopped green chilis

How To Make texas lasagna

  • 1
    in a skillet cook and drain ground beef, add onions, salt, taco seasoning, tomatoes, tomatoes sauce, green chilis, and mix well, simmer on low for 15 minutes.

    combine eggs, cottage cheese, and set aside.

    in a greased baking pan 9x13" layer half of the beef mixture, then put 6 tortillas on top of that, then half of the cottage cheese mixture, then half the jack cheese. repeat the layers as above.

    bake at 350 for 30 minutes, let stand for 10 minutes and enjoy.
