This is a great mexican meal. It's fast and easy to make, I never have leftovers .

Ingredients

  • 1 1/2 pounds ground beef
  • 1 - med. onion chopped
  • 1 teaspoon salt
  • 1 package taco seasoning mix
  • 1 can (15 oz )chopped tomatoes
  • 1 can ( 15 oz ) tomatoe sauce
  • 2 cups ( 16 oz ) small curd cottage cheese
  • 2 - eggs
  • 12 - corn tortillas
  • 4 cups shreded monterary jack cheese or mexican blend cheese
  • 1 can ( 4 oz ) chopped green chilis

How To Make texas lasagna

  • Step 1
    in a skillet cook and drain ground beef, add onions, salt, taco seasoning, tomatoes, tomatoes sauce, green chilis, and mix well, simmer on low for 15 minutes.
  • Step 2
    combine eggs, cottage cheese, and set aside.
  • Step 3
    in a greased baking pan 9x13" layer half of the beef mixture, then put 6 tortillas on top of that, then half of the cottage cheese mixture, then half the jack cheese. repeat the layers as above.
  • Step 4
    bake at 350 for 30 minutes, let stand for 10 minutes and enjoy.
