sweet & sour stuffed veggies

I usually make an Italian version of this dish, but once when I was out of tomato sauce I improvised this version and I like it even better!

Ingredients
- 2 large red peppers
- 2 large zucchini
- 1 pound ground beef
- 1/2 cup white rice
- 4 ounces raisins
- 1 pint mushrooms, chopped
- 1/2 large onion, finely diced
- 1 - egg
- 2 tablespoons olive oil
- - salt and pepper to taste
- 1 tablespoon garlic powder
- 1/2 cup ketchup
- 1/4 cup brown sugar
- 1 teaspoon soy sauce
- 1 tablespoon thai chili sauce
How To Make sweet & sour stuffed veggies

Step 1Preheat oven to 350* Slice peppers in half, clean out veins and seeds. Slice zucchini into two halves and using a spoon, scoop out the seeds, leaving the ends in tact to form a long pocket for stuffing. Coat the veggies with olive oil, salt and pepper and pre-bake for 15 minutes.

Step 2While that is cooking, mix together in a large bowl the beef, rice, egg, 1/4C ketchup, raisins, mushrooms, 1/2t soy sauce, onion & 1/2T garlic powder.

Step 3When the veggies are done pre-baking, generously stuff them with the beef mixture. In a small bowl, mix together the remaining ketchup, soy sauce, garlic powder, brown sugar and Thai chili sauce. Coat the stuffed veggies by pouring the sweet & sour sauce over the tops and bake for 1 hour. Enjoy!!
