How to Make Sweet & Sour Stuffed Veggies

Step-by-Step

  1. Preheat oven to 350*
Slice peppers in half, clean out veins and seeds. Slice zucchini into two halves and using a spoon, scoop out the seeds, leaving the ends in tact to form a long pocket for stuffing. Coat the veggies with olive oil, salt and pepper and pre-bake for 15 minutes.
  2. While that is cooking, mix together in a large bowl the beef, rice, egg, 1/4C ketchup, raisins, mushrooms, 1/2t soy sauce, onion & 1/2T garlic powder.
  3. When the veggies are done pre-baking, generously stuff them with the beef mixture. In a small bowl, mix together the remaining ketchup, soy sauce, garlic powder, brown sugar and Thai chili sauce. Coat the stuffed veggies by pouring the sweet & sour sauce over the tops and bake for 1 hour. Enjoy!!
