I wanted to try a healthy version of shepherds pie. This dish is delicious!!! No guilt going back for more.

Ingredients

  • 1 1/2 pounds lean ground beef (93-98%)
  • 2 cups sweet onion, chopped
  • 2 bags frozen peas and carrots (16oz)
  • 2 cloves garlic,minced
  • 1/4 cup unsalted beef stock
  • 2 pounds sweet potatoes, peeled and cubed
  • 1 teaspoon worcestershire
  • 1 teaspoon dijon mustard
  • 1/4 cup tomato paste
  • 1 tablespoon dried oregano
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon black pepper
  • - paprika

How To Make sweet potato sheperds pie

  • Step 1
    Peel and chop sweet potatoes in chunks. Cook in 2 cups water until tender.
  • Step 2
    Chop onions. Mince garlic. Measure stock and tomato paste. Cook ground beef and onions until no longer pink. Add spices, stock, tomato paste, garlic, Dijon mustard, and peas and carrots. Cook until peas and carrots are thawed.
  • Step 3
    Drain sweet potatoes. In medium bowl, add potatoes, 3/4 C half and half, 1 tsp fine sea salt, and 1/4 tsp black pepper. Mash until smooth.
  • Step 4
    Spread meat mixture into a 13X9 baking dish. Top with mashed sweet potatoes. Sprinkle paprika on top.
  • Step 5
    Bake in a 350 oven for 30 minutes or until edges are browned.
  • Step 6
    Serve with tossed salad and garlic bread.
