My son does not like meat loaf. My husband and I are always fighting with him to try it and if he doesn't like it, we won't place it on the plate anymore. Also, my son rather eat backwards (dessert first then his meal). I was about to loose my mind until I came up with this thought and tricked my 12 year old son

Ingredients

  • 1 pound lean ground beef
  • 1/2 cup bread crumbs, seasoned
  • 1 cup grated monterey jack cheese
  • 3 tablespoons ketchup
  • 1 - egg
  • 1/2 teaspoon celery salt
  • 1/4 teaspoon pepper
  • POTATO FROSTING
  • 3 cups mashed potatoes
  • - food coloring

How To Make surprise meat loaf cupcakes

  • Step 1
    Line 12 muffin tin cups with foil bake cups.
  • Step 2
    In a large bowl, mix together all of the meat loaf ingredients until well combined.
  • Step 3
    Fill each muffin cup about 3/4 full.
  • Step 4
    Place the filled muffin tins on cookie sheets and bake at 375 for 15 minutes or until cooked through.
  • Step 5
    Divide the mashed potatoes among three small bowls and stir a fewdrops of food coloring into each batch to create frostings.
  • Step 6
    Spread a generous dollup on each cupcake.
