steak in the grass (steak & dandelions)

One of my favorite submarine sandwiches to order is steak in the grass. I get a little upset when its made with spinach. Not that spinach and steak are not tastey, but the true italian way is with dandelions. Every year I go to the italian fest in town You bet thats the sandwich im going to get! Now being so easy to get at my local grocery store, I can have fun with these greens. If ya never tried, its a must.

Ingredients

  • 8 ounces flank steak
  • 1 large bunch dandelion greens
  • - olive oil
  • 1 medium onion
  • 2 cloves grated garlic
  • - s&p
  • pinch pepper flakes
  • 1 - 12 inch submarine roll toasted
  • 2-3 - slices mozzerella cheese

How To Make steak in the grass (steak & dandelions)

  • Step 1
    In skillet heat few teaspoons olive oil. season steak on both sides with s&p and fry on med high heat about 4 mins per side til med rare. Remove and put on plate cover with tin foil to rest.
  • Step 2
    In same pan drissel more olive oil add sliced onions, s&p, pepper flakes and garlic cook on med for 3 mins, add dandelions and continue to cook for another 8-10 min.
  • Step 3
    Slice steak thin against the grain. Start building sandwich on toasted roll drizzel with olive oil, slice and enjoy.
