steak and egg roll

Wanting steak and eggs led me down the road to this creation....and yes, another food inside of food dish. Making the egg "rolls" are the only time consuming thing about this dish, but it's a fun way to serve steak and eggs.

Ingredients

  • 16 - eggs
  • - milk
  • 1 1/2 pounds paper thin sirloin
  • - roasted tomatillo salsa
  • - grated cheddar cheese

How To Make steak and egg roll

  • Step 1
    I mixed two eggs at a time with 1 tbs. of milk and whisk briskly. I spray a NON STICK pan with spray oil and over a med. low heat I cooked the eggs with a glass lid on for about 2 min. then when they became solid enough I flipped them and cooked about 1 min. more. Cooking time will depend on pan and heat.
  • Step 2
    I placed the eggs on a baking sheet till I needed them.
  • Step 3
    (Ignore the rice on the meat, this is the only pix I have showing the thin sirloin I used!!) Then I cooked the sirloin on my indoor elec. grill, this took about 3 min. per side.
  • Step 4
    Then I cut the meat into large flat pcs. and put in my food processor and pulsed a few times, this did all the chopping for me!
  • Step 5
    I placed the grated cheese on the egg "roll", then some sirloin, rolled it up, and when the guys were ready to eat, they micro them for about 1 min. each. Garnish with your favorite egg or steak condiment.
