  • SALSA:

  • 2 c
    seeded tomato, chopped
  • 1/2 c
    red onion, finely chopped
  • 1/4 c
    fresh cilantro, chopped
  • 3 Tbsp
    fresh lime juice
  • 1 Tbsp
    extra-virgin olive oil
  • 1/2 tsp
    kosher salt
  • 1/4 tsp
    ground red pepper
  • STEAK:

  • 1 tsp
    garlic powder
  • 2 tsp
    ground cumin
  • 2 tsp
  • 1 tsp
    chipotle chile powder
  • 3/4 tsp
    freshly ground black pepper
  • 1/2 tsp
    kosher salt
  • 1/2 tsp
    ground cinnamon
  • 1 1/2 lb
    flank steak, trimmed
  • 1 Tbsp
    extra-virgin olive oil

    cooking spray

How to Make Spice-Rubbed Flank Steak with Fresh Salsa


  1. Preheat grill to high heat.
  2. To prepare salsa, combine the first 7 ingredients in a bowl.
  3. To prepare steak, combine the garlic powder and the next 6 ingredients (through cinnamon). Brush both sides of the steak with olive oil, and sprinkle with the spice mixture.
  4. Place the steak on a grill rack coated with cooking spray, and grill 4 minutes on each side or until it reaches the desired degree of doneness. Let stand for 5 minutes.
  5. Cook the steak diagonally across the grain into thin slices. Serve with salsa.
