This is a Greek inspired dish with a twist of healthiness that has many flavors.

Ingredients

  • 6 ounces sirloin steak
  • 1 tablespoon lemon juice
  • 2 teaspoons red wine vinegar ( 1 tsp reserved)
  • 1 teaspoon oregano
  • 1 clove garlic grated
  • 4 tablespoons evoo ( 3 tbs reserved)
  • 2 ounces feta cheese
  • 10 - cherry tomatoes cut in half
  • 1 tablespoon diced red onion
  • 1/2 - medium cucumber cut into 1/8 inch slices
  • 1/2 teaspoon pepper
  • 2 cups salad greens

How To Make souvlaki salad

  • Step 1
    In a freezer bag combine the steak,1 TBS olive oil,lemon juice, garlic, 1 tsp of the red wine vinegar ,oregano and mix around and coat the steak evenly. Place in refrigerator 1 hour or overnight.
  • Step 2
    In a small bowl combine the reserved EVOO, red wine vinegar,pepper and whisk until emulsified. Place the tomatoes,cucumbers,red onion,olives and feta cheese and mix thoroughly. This can also set in refrigerator overnight.
  • Step 3
    Take steaks out and allow to come up to room temperature. Place a grill pan on a medium to high heat and add a little oil. Cook steak until desired doneness.
  • Step 4
    Arrange salad greens on a plate and place entire steak or cut steak on top of greens and pour over the feta-cucmber salad.
