Ingredients For southwestern-style beef stew

  • 2 lb
    beef chuck roast, cut into 1 1/2 inch pieces
  • 1 lg
    onion, diced
  • 2
    garlic coves, minced
  • 1 1/2 c
    beef broth
  • 1/3 Tbsp
    dried parsley flakes
  • 1 tsp
    ground cumin
  • 1/2 tsp
    salt
  • 3
    carrots, sliced
  • 1 1/2 can
    rotel diced tomatoes and green chilies
  • 1 can
    14.5 oz. can whole kernel corn, drained (can use frozen corn)
  • 3
    zucchini squash, diced
  • 1 can
    14.5 oz. diced tomatoes (optional)

How To Make southwestern-style beef stew

  • 1
    Spray interior of crockpot with vegetable spray.

    Brown roast on both sides in a skillet.

    Place all ingredients in crockpot except zucchini. Cok on low 4-5 hours or until done to your liking.

    One hour before the end of cooking time, stir in diced zucchini.
