This is so flavorful and extremely easy to make. My families mouths drool smelling it all day in the slowcooker.

Ingredients

  • 2 1/2 pounds chuck roast
  • 1 jar goya sofrito(jar)
  • 1 1/2 cups instant brown rice
  • 2 cans low sodium black beans
  • 1/2 cup each of finely chopped onions,green peppers, and celery
  • 4 cups water
  • 3 tablespoons butter

How To Make sofrito black beans,rice & beef in slowcooker

  • Step 1
    Saute vegetables until softened, then add to slowcooker.
  • Step 2
    Pour 3/4 of jar of Sofrito into slowcooker, and add water. Whisk until blended.
  • Step 3
    Salt and pepper both sides of roast. Add Roast to slowcooker. Cook on low for approx. 6-7 hours.
  • Step 4
    When roast is cooked per meat thermometer, remain from cooker.
  • Step 5
    Add rice, and drained and rinsed beans to cooker and stir.
  • Step 6
    Cut up roast in to big chunks and add back to cooker. Stir until all is covered with liquid.
  • Step 7
    Bump temp on cooker up to high and cook for one hour. After one hour turn off, cool and eat.
