Ingredients
- 1 1/2 cups salsa, chunky style
- 1 can 6-oz. can tomato paste
- 1 package taco seasoning mix
- 1 cup water
- 3 pounds beef chuck roast
- 1/2 cup cilantro, chopped
- sliced onion and carrots to layer bottom of slow cooker
How To Make slow cooker mexican-style chuck roast

Step 1Spray interior of slow cooker with cooking spray.

Step 2In a bowl, combine the first 4 ingredients and mix well.

Step 3Layer onions and carrots on bottom of slow cooker and place chuck roast on top. Pour tomato mixture over the top of the roast.

Step 4Cook on low 6-8 hours or until roast is done to your liking.

Step 5Remove meat from crockpot and allow to stand for 10 minutes - then slice and serve along with onions and carrots. Stir cilantro into sauce before serving as a side sauce for the beef.
