Ingredients

  • 1 1/2 cups salsa, chunky style
  • 1 can 6-oz. can tomato paste
  • 1 package taco seasoning mix
  • 1 cup water
  • 3 pounds beef chuck roast
  • 1/2 cup cilantro, chopped
  • sliced onion and carrots to layer bottom of slow cooker

How To Make slow cooker mexican-style chuck roast

  • Step 1
    Spray interior of slow cooker with cooking spray.
  • Step 2
    In a bowl, combine the first 4 ingredients and mix well.
  • Step 3
    Layer onions and carrots on bottom of slow cooker and place chuck roast on top. Pour tomato mixture over the top of the roast.
  • Step 4
    Cook on low 6-8 hours or until roast is done to your liking.
  • Step 5
    Remove meat from crockpot and allow to stand for 10 minutes - then slice and serve along with onions and carrots. Stir cilantro into sauce before serving as a side sauce for the beef.
