slow cooker beef chuck roast with veggies

I wanted to surprise my husband with a nice dinner because he's been so kind to me while I'm having a tough time with my personal health. I looked for a recipe for roast beef and I couldn't' find one that interested me. So I created this recipe. My husband enjoyed it and since he enjoyed it, so did I. It's simple but elegant at the same time.

Ingredients

  • 3 pounds beef chuck roast
  • 4 medium yellow onions, quartered
  • 10 small red potatoes, whole
  • 1 bag baby carrots
  • 1/4 cup worcestershire sauce
  • 2 tablespoons black pepper, evenly distributed
  • 2 tablespoons fine sea salt, evenly distributed
  • 2 tablespoons garlic powder, evenly distributed
  • 1 tablespoon ground mustard, evenly distributed
  • 1 tablespoon dried rosemary, crushed and evenly distributed
  • 2 - beef bouillon, cubes
  • 3 1/4 cups water

How To Make slow cooker beef chuck roast with veggies

  • Step 1
    Brown roast in 2 Tbsp. canola oil. When done, set aside on plate.
  • Step 2
    Cut onions into quarters and add to 6 qt. slow cooker.
  • Step 3
    Add potatoes and bouillon cubes to slow cooker
  • Step 4
    Evenly distribute seasonings on the roast.
  • Step 5
    Add roast to slow cooker.
  • Step 6
    Add carrots around the roast.
  • Step 7
    Add water around the roast and veggies,
  • Step 8
    Cover and cook on high for 6 hours.
  • Step 9
    Enjoy!
