Ingredients

  • 2 tablespoons olive oil
  • 3 pounds stew beef cubes
  • - salt & pepper to taste
  • 1 cup burgundy wine or preferred red wine
  • 1/2 cup beef broth
  • 1 cup tomato sauce
  • 1/4 cup all purpose flour
  • 3 cloves garlic, minced
  • 1 teaspoon ground thyme
  • 5 - carrots, cut into 2 inch pieces, diagonally or whole baby carrots
  • 1 pound baby new or fingerling potatoes, scrubbed, not peeled
  • 1 package (8 oz.) fresh mushrooms, cleaned and sliced
  • 2-3 tablespoons fresh chopped parsley

How To Make slow cooker beef burguignon

  • Step 1
    Heat olive oil in skillet.
  • Step 2
    Sprinkle beef with salt and pepper, then add to a skillet and brown.
  • Step 3
    Add flour to drippings stirring until smooth and combined. Add wine to the skillet. Simmer until wine is reduced by half, then add beef broth, and tomato sauce. Remove from heat. Add the sauce to the slow cooker.
  • Step 4
    Add garlic, thyme, carrots, potatoes, and mushrooms to the slow cooker. Stir to combine and cook on high high for 4 hours or low for 8 hours. Add more salt and/or pepper if needed.
  • Step 5
    Plate, garnish with fresh parley and serve!
