I wanted to make a roast, but w/ some "kick" to it, so I added cajun seasoning and hot sauce. The peppers give it a great color and taste.

Ingredients
- 2-1/2 pound boneless beef chuck pot roast, trimmed of any fat
- 1 tablespoon cajun seasoning
- 1 tablespoon hot sauce
- 1/8 teaspoon pepper
- 1 - 14-1/2 oz can diced tomatoes w/ chiles
- 1 large green bell pepper, cut into strips
- 1 large red bell pepper, cut into strips
- 1 large yellow bell pepper, cut into strips

Step 1Sprinkle cajun seasoning over meat, rub in w/ fingers. Place meat in a 4-quart slow cooker. Add hot sauce and pepper.

Step 2Pour undrained tomatoes over meat. Cook on low for 8 hrs, or on high for 5 hrs, adding pepper strips the last 30 mins of cook time.

Step 3Transfer meat to a cuuting board, slice meat, place on a platter. Using a slotted spoon, remove peppers, place on top of meat.
