I was craving a big pot of Chili for the Steeler game Sunday, and this is what I threw together. I used what I had in the pantry. I like sweet & spicy and this fit the bill. You won't be asking...WHERES THE BEEF?... as It's loaded with meat and just the right amount of beans and sauce. We like spicy, but if you like a little less heat, just cut the spice amounts down. Simple ingredients, lots of flavor! I hope you try this tasty chili sometime.

Ingredients For ~ simple game day chili ~ cassie's way!

  • 1 Tbsp
    olive oil
  • 2 lb
    ground chuck
  • 1 Tbsp
    jarred minced garlic
  • 1 1/2 md
    onions, chopped
  • 4
    serrano chiles - cut into and sliced
  • 1
    red bell pepper, chopped
  • 2 - 15 oz
    cans, dark red kidney beans - drained
  • 16 oz
    tomato sauce
  • 1 - 28 oz
    can - diced tomatoes and juice
  • 1 c
    water
  • 3 Tbsp
    chili powder
  • 2 Tbsp
    packed, brown sugar
  • 1 1/2 tsp
    oregano, dried
  • 1 tsp
    kosher salt
  • 1/4 tsp
    each - cayenne red pepper & red pepper flakes or to taste
  • condiments
    such as shredded cheese, green onion and sour cream

How To Make ~ simple game day chili ~ cassie's way!

    In a dutch oven over medium heat, add oil, once hot add ground beef, onion and garlic and as beef browns break apart. Continue cooking until beef is no longer pink and onion is tender. Add pepper and stir. Cook a few more minutes. Drain if meat is greasy.

    Add meat back to pan and stir in all remaining ingredients. Simmer for 30 - 35 minutes or until desired thickness. Stir often to keep from sticking. Note* This would be great to simmer on low in the crock pot too!
