This recipe was a staple in my house as a child and as a wife. It is a great comfort food. You can cook this in the Crock Pot and add the bacon and cheese at the end. Personally, I like to cook the ground beef first and then bake it in the oven for 1 1/2 hours or until the rice is done. If I am using brown rice, I also leave in the liquid from the can of corn. I always add the bacon and cheese last. We really don't care for the cheese on it, but that is just personal preference. I hope you will try this and enjoy it.

We love an easy casserole for dinner, and this seven layer ground beef casserole is one of them. The hardest part is browning the ground beef and layering the ingredients. You don't need to pre-cook the rice. It cooks in the oven and adds to the heartiness of the meal. Tomatoes, corn, chopped bell pepper, and onions also add flavor. The ground beef casserole is topped with smoky bacon and a nice amount of cheese. A great meal for when prep time is limited.
Ingredients
- 1 pound extra lean ground beef
- - salt and pepper, to taste
- 1 cup uncooked white or brown rice
- 1 can whole kernel corn (15.25 oz)
- 1 can Italian-style diced tomatoes (14.5 oz)
- 1 can tomato sauce (8 oz)
- 1/2 cup water
- 1/2 cup diced onion
- 1/2 cup chopped green bell pepper
- 1 clove garlic, minced
- 4 slices bacon, cut into bite-sized pieces
- 1 cup shredded cheddar cheese or cheddar Jack blend

Step 1Brown ground beef and set aside. Salt and pepper to taste. Preheat the oven to 350 degrees F.

Step 2In a 9x13 dish, spread the rice on the bottom of the pan for layer one. Then layer two is the can of corn with the liquid.

Step 3Then layer 3 is the canned diced tomatoes, tomato sauce, and 1/2 cup of water.

Step 4Then layer 4 is the diced onions, bell peppers, and minced garlic.

Step 5Next layer 5 - the browned ground beef.

Step 6Next layer 6 - the bacon.

Step 7Cover and bake at 350 degrees for 1 hour.

Step 8Uncover and cook 30 minutes longer until the bacon is crisp.

Step 9Next is layer 7. Top the casserole with the shredded cheese for the last 10 - 15 minutes.
