Ingredients
- 2 pounds ground buffalo,or ground turkey,or ground chuck.
- 1 large onion
- 2 packages ranch style dressing mix
- 2 packages taco seasoning mix
- 1 can each black beans,kidney,and pinto beans.
- 2 cans rotel diced tomatoes and chilies,chunky
- 6 slices bacon
- 1 large can stewed tomatos
- 1 can white corn.
- 2 cans beef broth, reduced sodium
- 16 ounces baby portebello mushrooms sliced
How To Make santa fe soup

Step 1in a large dutch oven,(i use a cast iron dutch oven when camping).cook bacon till almost crisp. remove with sloted spoon,reserve. in bacon drippings add onions,and mushrooms,cook till onion is soft. remove and reserve. add turkey,or beef or buffalo. cook till no longer pink. drain any fat. add onions,bacon,and mushrooms.

Step 2add taco seasoning,and ranch dressing stir to mix well. add remaning ingredients ,add beef broth. Simmer for 2-2,1/2 hours. serve with tortilla chips,garnish with sour cream,cheese,and chopped gree oinons.
