rosalind's tacos
My Granny had two taco recipes: "Regular Tacos" (ground hamburger with salt, pepper and an onion) and her "Special Tacos" which is this recipe. Her cooking style was always very simple, and many of her recipes stem from the early 30's from her mother, during the Depression era. These recipes are always the ones I love best - you can do so much with so little. I grew up loving these tacos, and I hope you will too.

Ingredients
- 3 pounds chuck roast or stew meat
- 1 large onion
- 5 packages taco seasoning mix
- 1 package taco shells
How To Make rosalind's tacos

Step 1Trim chuck roast and cut into 2 inch cubes. Place meat cubes, onion, salt, and taco seasoning into pressure cooker. Cover with enough water to cover the meat.

Step 2Cook at 15lb pressure for 30 minutes. Remove from heat and remove pressure immediately.

Step 3Remove meat and onion, and put through a food chopper/processor/blender. Add broth from cooker until meat is moist.

Step 4Heat taco shells in over. Serve!
