bought 1 1/2 bussels of peppers was gettin tired of choppin them so decided to come up with recipe for red stuffed pepper instead of green one this is what i came up with hope ya like it

Ingredients
- 2 medium red bell peppers,top removed and seeds and viens removed...keep top
- 2/3 pound ground chuck
- 1 small red onion,chopped fine
- 1 can mushroom soup,undiluted,divided
- 1/2 pound button mushroom,chopped fine
- 1/2 cup instant rice
- 1 cup + 2t sharp cheese
- 1/2 stick margarine
- 1 teaspoon jarred minced garlic
- 2 tablespoons fresh parsley,chopped
- - fresh ground black pepper,to taste...please no salt added is alot in the soup

Step 1pre heat oven to 375 place red pepper in oven proof dish

Step 2in med size fry pan add margarine heat til it melts add onion cook til it starts to brown then add mushrooms and garlic cook til mushrooms cooked turn off and cool several min

Step 3take 2 bowls one small one med size in small bowl put 3T mushroom soup[put the rest in larger bowl]2t cheese,parsley mix well

Step 4in other bowl add beef,rice,cheese,and cooled mushrooms mix well add pepper as needed

Step 5now fill red peppers with meat mixture spoon soup mixture on top bake 40-45 min til red pepper is tender

Step 6great served with small baked tater and green beans
