quick and easy enchilada's

So easy I taught my 10 year old grandaughter Elysseya to make these so she can cook a complete meal for her Mom. I have taken these to church meals and honestly..every time my large broiler pan full empties first. My 3 year old granddaughter eats these. I created this because it is not messy, don't have to cook and soften tortillas, and wanted more flavor in sauce.

Ingredients

  • 2 pounds ground beef
  • 1 can mild, old el paso enchlada sauce
  • 2 cans chili, with no beans,
  • 1 pound cheddar cheese, shredded
  • 1 package taco seasoning mix, mild
  • 1 can black olives
  • 12 large flour tortillas

How To Make quick and easy enchilada's

  • Step 1
    WARM in suuce pan enchilada sauce and chili no beans, until hot and blended. COOK in fry pan ground beef with taco seasonings.
  • Step 2
    PUT 1/3 cup of meat mixture on flour tortilla in a line through center. FOLD over and roll up. POUR 3/4 cup of sauce in the bottom of a 9 X 13 baking dish.
  • Step 3
    ROLL all 12 torillas with meat mixture and place in baking dish. CUT all in half.
  • Step 4
    POUR remander of sauce over the top. SPRINKLE schredded cheese over top. TOP olives. BAKE 350 for 20 minutes until hot and cheese is melted.
