Some days there is not an abundance of food and I am determined to take what I have and turn it into something delicious. This was one of those days.

Ingredients

  • 1 pound ground beef or turkey
  • 1 medium onion, diced
  • 1/2 medium bell pepper, diced
  • 1 teaspoon cayenne pepper
  • 2 boxes betty crocker au gratin potatoes
  • 3 cups 2 percent mild
  • 3 tablespoons tony chachere cajun seasoning
  • 2 cups cheddar cheese, shredded
  • - salt and pepper

How To Make potato au gratin casserole

  • Step 1
    Heat oven to 350 degrees, gather ingredients, spray 13x9x2" baking dish with nonstick spray. In a skillet brown your ground beef or turkey strain off grease. set aside.
  • Step 2
    Take diced onion and pepper and mix with ground beef. Sprinkle in cajun seasoning, onion and garlic powder and salt and pepper, taste. adjust seasoning if needed.
  • Step 3
    Fix au gratin potatoes according to package directions and pour over ground beef mixture. Put in the oven, center rack for about 40-45 minutes covered with lid or foil.
  • Step 4
    Its done when bubbly and creamy, take foil off, sprinkle with cheese. Cut the oven off, the cheese will melt over the dish. Serve hot with green salad and bread.
