These meatballs are so juicy and delicious. I promise you will get rave reviews when you serve these. They are even a hit with my mother-in-law. Of course my mother's are still the very best. I must warn that this entree can become addictive and goes best with pinto beans and cornbread. (And my cornbread salad which is also posted he-he). Save the pinto's for the pie..(also posted). ;)

Ingredients
- 1 pound ground beef
- 1 large onion
- 2 cans cream of mushroom soup
- 2 - eggs
- 1 1/2 cups minute rice (uncooked)
- - crushed crackers or bread crumbs
How To Make porcupine meatballs oooh soo gooood..

Step 1Preheat oven to 350 cover baking sheet with foil. Mix all ingredients in a large bowl and reserve 1/2 can of the Cream of Mushroom soup.

Step 2Roll into meatballs to the size of your choosing. Spread some of the soup on top of each meatball. Bake for 20-25 minutes or until done. Enjoy!
