Ingredients
- 4 pounds boneless chuck roast
- 1 large onion, peeled and thinly sliced
- 1/2 cup butter, softened
- 1/4 cup wine vinegar
- 1/4 cup water
- 2 cloves garlic, mashed
- 1 1/2 teaspoons paprika
- 1 teaspoon coarse salt
- 4 - whole allspice berries
- 1 small chili pepper
- 1 - 2-inch piece cinnamon stick
- - white wine, as needed
How To Make pico island pot roast with allspice

Step 1Preheat oven to 350F. Place the roast in a large Dutch oven.

Step 2Add remaining ingredients, except white wine, to the pot. Turn roast to coat. Pour in enough wine to come three-fourths of the way up the sides of the roast. Cover pan tightly.

Step 3Place the pan in the oven for 1 hour. Reduce heat to 200F. and continue to roast for 3 hours.

Step 4Serve, with juices, with buttered rice or potatoes.
