pico de gallo meatloaf

This is a another meatloaf idea I came up with. It is so moist and full of flavor!

Ingredients

  • 2 pounds ground beef
  • 2 - eggs
  • 1/4 cup taco sauce (taco bell)
  • 1 tablespoon worcestershire sauce
  • 2 teaspoons southwest seasoning mix
  • 2 teaspoons granulated garlic
  • 1 teaspoon granulated onion
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon mexican oregano
  • 1 - roma tomato
  • 1/2 small onion
  • 1 - jalapeno

How To Make pico de gallo meatloaf

  • Step 1
    Mix all ingredients together. Pat into a log and place in a baking dish.
  • Step 2
    Pour some taco sauce on top and brush over meatloaf. Bake 375° for 1 hr. & 15 min or till meat is up to temp. Continue adding taco sauce on top every 30 min while it cooks.
