Ingredients
- 4 pounds ground sirloin
- 2 large eggs
- 1 cup diced green pepper
- 1 medium onions, vidalia, peeled and diced
- 1 package liptons onion soup
- 1 pinch red pepper
- 1 pinch black pepper
- 2 cups bread crumbs
- 1 ounce brandy
- 3 slices apple wood bacon
How To Make phil's pirate meatloaf

Step 1In a large mixing bowl hand mix all the ingredients except the bacon. Mix well till everything is incorporated.

Step 2Take a large baking dish and grease lightly with olive oil. Put mixture in molding to dish. In a preheated to 325 degrees oven put on center rack and cook for approximately 45 minutes uncovered.

Step 3After 45 minutes remove from oven and drain some of the grease. Take the bacon strips and lay on top. Return to oven for an additional 30 minutes or until all is cooked well. Slice and enjoy. I like mine with ketchup. Great side dishes are mashed potatoes and green beans.
