peruvian lomo saltado
I learned to make this after visiting Peru in South America. This is a favorite in every restuant I went to. My Husband and brother-in-laws always request this for a favorite home cooked meal.

Ingredients
- 2 pounds beef sirloin steak, boneless
- 2 large red onions sliced thickly
- 1 large garlic bulb chopped
- 2 large green and red bell peppers sliced thickly
- 2 large ripe tomatoes sliced thickly
- 3 tablespoons chili powder
- 2 tablespoons cumin
- 2 tablespoons paprika
- 1 tablespoon cayenne pepper
- 2 tablespoons salt or more
- 2 tablespoons black pepper
- 1/4 cup ketchup
- 8 large potatoes washed and sliced home style
- 1/2 package choriso(optional)
- 1 bunch cilantro fresh chopped

Step 1PREP TIME: Easiest for me- roll steak into a roll, slice thinly. Slice onions from top to bottom about 1/2 inch thick. Chop garlic. Slice Tomatoes top to bottom about 1/2 inch thick. Slice peppers the same. Wash Potatoes and slice thickly like home fries.(Some people use frozen fries)I like to have this all on my cutting board and add one at a time.

Step 2To start deep fry potatoes and put in pan in low heat oven to keep warm. Add slight oil to very hot pan. Add meat, onions,garlic,and peppers. Saute for 5 min, and rest of seasonings saute 5 more minutes don't let it dry out. Finally Add Tomatoes and saute for 2 minutes..This should be still some juice from the veges in the bottom.(For a tasty variation add 1/2 tube of Beef Choriso while cooking )

Step 3PLATE FOOD; Add generous amount of fries,Add meat mixture on top and pour just a bit of juice over each.Top with some chopped cilantro. Served with Peruvian Rice on the side.
