our family's favorite meat loaf

This is the good ol' meat loaf I grew up with. I didn't think there was any other kind for years. I tweaked the recipe recently and substituted Panko bread crumbs for the oats and added a chopped green pepper. It's easy and it's GOOD! I believe my mother often served it with baked beans on the side. I prefer a side of macaroni and cheese.

Ingredients

  • 1 1/2 pounds ground beef (i use chuck)
  • 1 cup panko bread crumbs
  • 1/4 cup chopped onion
  • 1 medium green pepper, chopped
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 cup tomato juice
  • 1 - egg, beaten

How To Make our family's favorite meat loaf

  • Step 1
    In a large bowl, combine all the ingredients. Pack firmly into an ungreased loaf pan.
  • Step 2
    Bake in a preheated 350-degree oven for 1 hour and 15 minutes. Pour off any grease.
  • Step 3
    Let stand 5 minutes before slicing. I like mine with a little ketchup. Some like A-1, mustard, or even plain.
