This is a delicious lean beef dinner! I made this up one night when I didn't know what to do w/ the beef, but knew I wanted something w/ an Asian flair. The orange juice and orange peel give it a great tangy flavor. \Calories: 325 Fat: 12 grams Carbs: 7 grams

Ingredients

  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons frozen orange juice concentrate, thawed.
  • 2 tablespoons cornstarch
  • 1 teaspoon ground ginger
  • 1 teaspoon grated orange peel
  • 1 pound lean beef, cut into strips.
  • 2 cups broccoli florets
  • 1 large red onion, cut into thin wedges
  • 1 tablespoon canola oil
  • 1 small can fat-free beef broth
  • 2 cups hot cooked rice.

How To Make orange-glazed ginger beef

  • Step 1
    In large bowl combine, soy sauce, orange juice, cornstarch, ginger and orange peel. Stir to dissolve cornstarch. Add beef. Marinate 30 minutes. In skillet over med-high heat, add oil, broccoli, and onion. Cook, stirring for 3 min. Remove from pan. Drain beef, set aside marinade. In skillet, cook beef strips about 4 mins. Remove beef. Add marinade to skillet. Add broth, boil 5 mins. Add beef and veggies. Heat through. Serve over hot cooked rice.
