I found this recipe in my Mom's old cookbook's she has since passed away. My Mom was a great cook from the country and cooked her homemade pies, goulsh, pot roast's and her speciality was her beef stew casseroles and the lists goes on... Enjoy this stew.

- 2 pounds beef, cubed
- 3 sticks celery, chopped
- 5 - carrots, diced
- 3 - onion , chopped in chunks
- 2 tablespoons quick cooking tapioca
- 1 tablespoon salt
- 1 1/2 cups tomato juice or v8
- 4-6 - diced, potatoes
