you can leave out the soy sauce for a more italian taste. i came up with this dish by accident, lol. the soy sauce was added as an after thought when my son tasted it and said "hmmm, kinda tastes asian, lets try some soy sauce." we did, to a bite for each of us, liked it and so we started adding it to whole pan till we got the taste we liked. hope yall enjoy it as much as we have. i put 1.5 hrs for cooking time because i really don't remember how long we let it simmer. the lower and longer you let it simmer the more the meat picks up the flavors.

Ingredients
- 1 1/2 pounds lean stew meat
- 1 medium onion, sliced thinly
- 2 tablespoons crushed garlic
- 1 can tomato paste
- 32 ounces beef broth
- 1/4 cup soy sauce, dark or light, have used both
- 4-5 - fresh basil leaves
- 1/2 teaspoon oregano, dried
- 1/4 teaspoon chipotle, to taste

Step 1saute onion & garlic in oil of choice, i use safflower for the added peppery taste it can lend, with 4-5 basil leaves, oregano and chipotle powder til onion is almost caramelized.

Step 2add meat and brown slightly on all sides.

Step 3add tomato paste, broth & soy sauce. simmer til meat is cooked thru.
