My family are meat and potato lovers, so this steak is one we all find to be simple and hearty,it's the herb butter that sets this apart from the othets, but nothing can compete.Convert a simple minute-steak dinner into an elegane fare.

1 1/2- 2 lb
bonelss beef, top sirloin , or top round, cut into 4 servings, pounded very thin with a meat mallet.
4 Tbsp
( 1/2 stick ) unsalted butter
4 Tbsp
olive oil
salt and ppper to taste


1 stick
soft unsalted butter
2 Tbsp
finley chooped parsley ( fresh )
2 tsp
finley chopped tarragon or 2/3 teaspoons dried
2 Tbsp
finley chopped chives
salt and pepper to taste

How to Make Minute Steaks with Herb Butter


  • 1Hurb Butter -- Combine all ingredients, blending well with a fork. Chill , when firm ehough to handle, reshape it into a stick or round ,wrip in wax papper and refrigerate for one hour before using.
  • 2Sprinkle each stake lightly with salt and pepper.
  • 3In a large frying pan heat 1 tablespoon butter and 1 tablespoon oil for each steak. Add the steaks and over high heat cook quickly, about 2 minutes, turning once.
  • 4Serve very hot, immediately, with a square/round of the herb butter melting on each steak.
