Ingredients For minute steaks with herb butter

1 1/2- 2 lbbonelss beef, top sirloin , or top round, cut into 4 servings, pounded very thin with a meat mallet.

4 Tbsp( 1/2 stick ) unsalted butter

4 Tbspolive oil
-
salt and ppper to taste
- HERB BUTTER
-
1 sticksoft unsalted butter
-
2 Tbspfinley chooped parsley ( fresh )
-
2 tspfinley chopped tarragon or 2/3 teaspoons dried
-
2 Tbspfinley chopped chives
-
salt and pepper to taste
How To Make minute steaks with herb butter

1Hurb Butter -- Combine all ingredients, blending well with a fork. Chill , when firm ehough to handle, reshape it into a stick or round ,wrip in wax papper and refrigerate for one hour before using.

2Sprinkle each stake lightly with salt and pepper.

3In a large frying pan heat 1 tablespoon butter and 1 tablespoon oil for each steak. Add the steaks and over high heat cook quickly, about 2 minutes, turning once.

4Serve very hot, immediately, with a square/round of the herb butter melting on each steak.
