Ingredients
- 1 1/2- 2 pounds bonelss beef, top sirloin , or top round, cut into 4 servings, pounded very thin with a meat mallet.
- 4 tablespoons ( 1/2 stick ) unsalted butter
- 4 tablespoons olive oil
- - salt and ppper to taste
- HERB BUTTER
- 1 stick soft unsalted butter
- 2 tablespoons finley chooped parsley ( fresh )
- 2 teaspoons finley chopped tarragon or 2/3 teaspoons dried
- 2 tablespoons finley chopped chives
- - salt and pepper to taste
How To Make minute steaks with herb butter

Step 1Hurb Butter -- Combine all ingredients, blending well with a fork. Chill , when firm ehough to handle, reshape it into a stick or round ,wrip in wax papper and refrigerate for one hour before using.

Step 2Sprinkle each stake lightly with salt and pepper.

Step 3In a large frying pan heat 1 tablespoon butter and 1 tablespoon oil for each steak. Add the steaks and over high heat cook quickly, about 2 minutes, turning once.

Step 4Serve very hot, immediately, with a square/round of the herb butter melting on each steak.
