My family are meat and potato lovers, so this steak is one we all find to be simple and hearty,it's the herb butter that sets this apart from the othets, but nothing can compete.Convert a simple minute-steak dinner into an elegane fare.

Ingredients

  • 1 1/2- 2 pounds bonelss beef, top sirloin , or top round, cut into 4 servings, pounded very thin with a meat mallet.
  • 4 tablespoons ( 1/2 stick ) unsalted butter
  • 4 tablespoons olive oil
  • - salt and ppper to taste
  • HERB BUTTER
  • 1 stick soft unsalted butter
  • 2 tablespoons finley chooped parsley ( fresh )
  • 2 teaspoons finley chopped tarragon or 2/3 teaspoons dried
  • 2 tablespoons finley chopped chives
  • - salt and pepper to taste

How To Make minute steaks with herb butter

  • Step 1
    Hurb Butter -- Combine all ingredients, blending well with a fork. Chill , when firm ehough to handle, reshape it into a stick or round ,wrip in wax papper and refrigerate for one hour before using.
  • Step 2
    Sprinkle each stake lightly with salt and pepper.
  • Step 3
    In a large frying pan heat 1 tablespoon butter and 1 tablespoon oil for each steak. Add the steaks and over high heat cook quickly, about 2 minutes, turning once.
  • Step 4
    Serve very hot, immediately, with a square/round of the herb butter melting on each steak.
