So easy, so delicious. My husband actually decided he liked guacamole after years of refusing to eat it! Serve with typical taco condiments.

    6 inch flour tortillas
  • ·
    cooking spray
  • 1
    17 oz package fully cooked beef pot roast au jus
  • 1
    7 oz package of refrigerated guacamole
  • 3/4 c
    shredded reduced fat mexican blend cheese

How to Make Mexican Tostada


  1. Preheat oven to 400.
  2. Coat tortillas on both sides with cooking spray; place on a large baking sheet. Bake for 8 mins.
  3. While tortillas cook, microwave roast according to package directions. Shred beef with 2 forks, discarding juices. Cover beef, and keep warm.
  4. Spread tortillas evenly with guacamole; top evenly with beef and cheese.
  5. Bake for 5 mins or until cheese melts. Serve immediately!
