mexican lasagna

Sometimes I like to change it up so sometimes I make Lasagna this way. Enjoy!!!!!!!!!!!!!!!!!!!!!!

Ingredients

  • 1 1/2 pounds ground chuck
  • 1 1/2 teaspoons ground cumin
  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon red chili pepper
  • 1 teaspoon salt and pepper
  • 16 ounces can of diced tomatoes
  • 12 small corn tortillas
  • 2 cups cottage cheese, small curd, drained
  • 1 cup monterey jack cheese with jalapeno peppers, shredded
  • 1 large egg
  • 1 cup cheddar cheese, shredded
  • 2 cups lettuce,shredded
  • 3/4 cup tomatoes,chopped
  • 4 small green onions, finely chopped
  • 1/2 cup sliced black olives

How To Make mexican lasagna

  • Step 1
    Brown ground beef; drain thoroughly . Add cumin, chili powder, garlic powder, red pepper, salt, pepper, and tomatoes; heat through. Cover bottom and sides of a 13x9x2 inch baking dish with tortillas. Pour beef mixture over tortillas; Place a layer of tortillas over meat mixture and set aside. Combine cottage cheese, Monterey Jack cheese and egg; pour over tortillas. Bake at 350 degrees for 30 minutes. Remove from oven; sprinkle rows of cheddar cheese, lettuce, tomatoes, green onions, and olives diagonally across center of casserole. Serve immeadiately.
