Sometimes I like to change it up so sometimes I make Lasagna this way. Enjoy!!!!!!!!!!!!!!!!!!!!!!

Ingredients

  • 1 1/2 lb
    ground chuck
  • 1 1/2 tsp
    ground cumin
  • 1 Tbsp
    chili powder
  • 1/4 tsp
    garlic powder
  • 1/4 tsp
    red chili pepper
  • 1 tsp
    salt and pepper
  • 16 oz
    can of diced tomatoes
  • 12 small
    corn tortillas
  • 2 c
    cottage cheese, small curd, drained
  • 1 c
    monterey jack cheese with jalapeno peppers, shredded
  • 1 large
    egg
  • 1 c
    cheddar cheese, shredded
  • 2 c
    lettuce,shredded
  • 3/4 c
    tomatoes,chopped
  • 4 small
    green onions, finely chopped
  • 1/2 c
    sliced black olives

How to Make Mexican Lasagna

Step-by-Step

  1. Brown ground beef; drain thoroughly . Add cumin, chili powder, garlic powder, red pepper, salt, pepper, and tomatoes; heat through. Cover bottom and sides of a 13x9x2 inch baking dish with tortillas. Pour beef mixture over tortillas; Place a layer of tortillas over meat mixture and set aside. Combine cottage cheese, Monterey Jack cheese and egg; pour over tortillas. Bake at 350 degrees for 30 minutes. Remove from oven; sprinkle rows of cheddar cheese, lettuce, tomatoes, green onions, and olives diagonally across center of casserole. Serve immeadiately.
