Sometimes I like to change it up so sometimes I make Lasagna this way. Enjoy!!!!!!!!!!!!!!!!!!!!!!

Ingredients

1 1/2 lb
ground chuck
1 1/2 tsp
ground cumin
1 Tbsp
chili powder
1/4 tsp
garlic powder
1/4 tsp
red chili pepper
1 tsp
salt and pepper
16 oz
can of diced tomatoes
12 small
corn tortillas
2 c
cottage cheese, small curd, drained
1 c
monterey jack cheese with jalapeno peppers, shredded
1 large
egg
1 c
cheddar cheese, shredded
2 c
lettuce,shredded
3/4 c
tomatoes,chopped
4 small
green onions, finely chopped
1/2 c
sliced black olives

How to Make Mexican Lasagna

Step-by-Step

  • 1Brown ground beef; drain thoroughly . Add cumin, chili powder, garlic powder, red pepper, salt, pepper, and tomatoes; heat through. Cover bottom and sides of a 13x9x2 inch baking dish with tortillas. Pour beef mixture over tortillas; Place a layer of tortillas over meat mixture and set aside. Combine cottage cheese, Monterey Jack cheese and egg; pour over tortillas. Bake at 350 degrees for 30 minutes. Remove from oven; sprinkle rows of cheddar cheese, lettuce, tomatoes, green onions, and olives diagonally across center of casserole. Serve immeadiately.
