This is one of my favorite meat loafs... It makes 2 loaves Delicious -- To die for!

Ingredients

  • 3 - eggs
  • 1/2 cup ketchup
  • 2 1/2 teaspoons seasoned salt
  • 2 teaspoons worcestershire sauce
  • 1/4 teaspoon ground mustard
  • 1/8 teaspoon pepper
  • 3/4 pound lean ground beef
  • 3/4 pound ground veal
  • 3/4 pound ground pork
  • 1/3 cup onion, chopped
  • 3/4 cup bread crumbs
  • 1 package (17 1/4 oz.) frozen puff pastry, thawed
  • MADEIRA SAUCE:
  • 1/4 cup butter
  • 5 tablespoons all purpose flour
  • 2 cups beef consomme
  • 1 tablespoon tomato paste
  • 1/4 teaspoon thyme
  • 1/4 teaspoon rosemary
  • dash ground cloves
  • 1/2 cup beef broth
  • 2 cups fresh mushrooms, sliced *** more if you like
  • 2 tablespoons olive oil

How To Make meat loaf wellington

  • Step 1
    In a bowl beat 2 eggs, ketchup, seasoning salt, Worcestershire sauce, mustard & pepper. Crumble meat over mixture & mix well. Sprinkle with onion & bread crumbs; mix gently. Shape into TWO loaves, about 9 x 3inches.
  • Step 2
    On a lightly floured surface, roll out each pastry sheet into an 18 x 16 inch rectangle. Invert meat loaves & place in center of each pastry; fold short sides of pastry over meat loaf. Fold long sides over meat loaf & pastry; seal seams.
  • Step 3
    Place seam down on a rack in a 15 x 10 inch baking pan. Beating remaining egg; brush over pastry. Bake at 350 degrees for 60 to 70 minutes.
  • Step 4
    MADEIRA SAUCE:
  • Step 5
    Melt butter in saucepan. Whisk in flour until smooth. Stir in consomme, tomato paste, thyme, rosemary & cloves. Bring to boil; cook & stir for about 2 minutes or until thickened. Stir in beef broth; keep warm. In skillet, saute mushrooms in olive oil until tender. Add to sauce; spoon over sliced meat loaf.
