Ingredients
- 2 eggs
- 1/2 cup black bean salsa or regular bottled salsa
- 1 cup corn chips, finely crushed
- 1 1/4 pounds lean ground beef
- 1/4 cup black bean salsa, bottled salsa or tomato sauce
- 1/3 cup corn chips, coarsely chopped
- dairy sour cream
- sliced green onions
- shredded cheddar cheese
How To Make meat loaf ole'

Step 1Preheat oven to 350 degrees F.

Step 2In a large bowl, beat the eggs and add 1/2 cup salsa and the finely crushed corn chips. Add ground beef; mix well. Pat mixture into a loaf pan.

Step 3Bake meatloaf in a preheated oven for 55-60 minutes or until 160 degrees. Drain fat and cool for approx. 10 minutes.

Step 4Transfer meatloaf to a platter. Spread the remaining 1/4 cup salsa over meat loaf and top with cheddar cheese if desired. Sprinkle top with coarsely chopped corn chips and serve with sour cream, if desired.
