  • 1/2 c
    black bean salsa or regular bottled salsa
  • 1 c
    corn chips, finely crushed
  • 1 1/4 lb
    lean ground beef
  • 1/4 c
    black bean salsa, bottled salsa or tomato sauce
  • 1/3 c
    corn chips, coarsely chopped
  • ·
    dairy sour cream
  • ·
    sliced green onions
  • ·
    shredded cheddar cheese

How to Make Meat Loaf Ole'


  1. Preheat oven to 350 degrees F.
  2. In a large bowl, beat the eggs and add 1/2 cup salsa and the finely crushed corn chips. Add ground beef; mix well. Pat mixture into a loaf pan.
  3. Bake meatloaf in a preheated oven for 55-60 minutes or until 160 degrees. Drain fat and cool for approx. 10 minutes.
  4. Transfer meatloaf to a platter. Spread the remaining 1/4 cup salsa over meat loaf and top with cheddar cheese if desired. Sprinkle top with coarsely chopped corn chips and serve with sour cream, if desired.
