mama's southern meat loaf
Not only is this my favorite meat loaf recipe, it is also my sisters , and her family favorite also, my nephew never liked meatloaf till my sister made this version from my cookbook. He has been hooked on it every since. We all love it, and when I make it, I double the recipe and make 2 to have for later. I also like to add that HEINZ is the ONLY CATSUP WE USE IN OUR HOUSEHOLD. Therefore it is what I use when making this recipe, some how the other brands do not measure up to the quality or taste of this one, just a personal opinion.

Ingredients
- 2 1/2 pounds lean ground beef
- 2 cans 6 oz. each tomato paste
- 1 cup cracker crumbs, whole wheat bread crumbs, or oatmeal
- 1 medium onion, chopped
- 1 medium bell pepper, chopped
- 2 large eggs
- 2 teaspoons graulated sugar
- 1 cup evaporated milk
- 1/2 cup heinz catsup
- - salt & pepper to taste
How To Make mama's southern meat loaf

Step 1PREHEAT OVEN TO 350 DEGREES F.In a large bowl, add evaporated milk, tomato paste, eggs and sugar. whisk together till mixed. pour in cracker crumbs or which ever you are using, Add chopped onions and bell pepper.

Step 2Add Ground beef, and combine together till well mixed. Shape into loaf. GLAZE TOP OF MEAT LOAF WITH CATSUP, and bake in preheated 350 degree F oven.

Step 3Bake for 1 hour and 10 minutes.

Step 4NOTE: When ever I make this recipe I have to double the recipe and make 2, as you see in the picture. The recipe ONLY MAKES ONE MEAT LOAF.
