mama's microwave meatloaf
My mother was slow to accept the use of a microwave, but once hooked, she loved using it, especially for cooking things that would normally take a longer time in the oven. This meatloaf recipe was one of those. I found the card while cleaning and organizing in my kitchen. I would suggest using a microwave-safe tube-shape pan for even cooking, but she would use a 9-inch pie plate and form a round loaf in it. Or you could form a ring in the pie plate, like a large doughnut shape with a hole in the middle, which helps with microwave cooking.

Ingredients
- 1 package lipton onion-mushroom soup mix
- 1 1/4 cups pepperidge farm dry stuffing
- 3/4 cup water
- 1/3 cup ketchup
- 2 pounds ground beef
- 2 large eggs
- 1 cup diced and sauteed onion/bell pepper mix (optional)

Step 1Combine soup mix, stuffing, water, and ketchup in a large bowl and allow to sit for 10-15 minutes. Then mix in all remaining ingredients. Shape into a loaf or a ring in a 9" glass pie plate. Cover with waxed paper.

Step 2Cook in microwave for about 20 -24 minutes. If no turntable, turn meatloaf a quarter turn every 5 minutes. (This time is for a 900-1000 watt oven. If yours is a 1200 watt oven, less time is required.)

Step 3Allow to stand about 10-12 minutes before slicing.
