From Luchow's in NYC. Make your own brown gravy or use a dry mix or canned. Good with butter noodles, fried potatoes or rice (my favorite).

Ingredients

2 Tbsp
butter
1 medium
onion, finely diced
1 lb
thinly sliced calf's liver (about 8 slices)
flour
salt and pepper, to taste
1/2 c
chablis
1/2 c
brown gravy

Step-By-Step

1In a skillet over medium heat, melt the butter and sauce onion until very soft.
2Dredge liver in flour and saute for 1 1/2 minutes per side(longer will make it tough). Salt and pepper, to taste.
3Add wine and stir well. Add brown gravy and let sauce come to a boil. Serve at once.
