From Luchow's in NYC. Make your own brown gravy or use a dry mix or canned. Good with butter noodles, fried potatoes or rice (my favorite).

Ingredients
- 2 tablespoons butter
- 1 medium onion, finely diced
- 1 pound thinly sliced calf's liver (about 8 slices)
- - flour
- - salt and pepper, to taste
- 1/2 cup chablis
- 1/2 cup brown gravy
How To Make luchow's calf's liver in wine

Step 1In a skillet over medium heat, melt the butter and sauce onion until very soft.

Step 2Dredge liver in flour and saute for 1 1/2 minutes per side(longer will make it tough). Salt and pepper, to taste.

Step 3Add wine and stir well. Add brown gravy and let sauce come to a boil. Serve at once.
