This quick and easy shepherd pie is something your entire family will love. A great use for leftover mashed potatoes. In a pinch, use boxed potatoes. We loved the addition of gooey cheese on top of the mashed potatoes. The gravy adds tons of flavor to the meat and vegetable mixture. Overall, this is a delicious and hearty dinner. An easy recipe to make on those nights you're rushed to get dinner on the table.

Ingredients For lori's quick and easy shepherd pie

2 lbextra lean ground chuck, browned and drained

1 mdonion, chopped and cooked with the beef

onion powder, to taste

salt, to taste

black pepper, to taste

2 canmixed vegetables, drained (15 oz each)

1 canwhole kernel corn, drained (15.25 oz)

1 cangreen beans, drained (14.5 oz)
-
2 pkgbrown gravy mix
-
1 1/2 ccold water
-
instant or fresh mashed potatoes prepared for 8 servings

1 cgrated cheese (like cheddar)
How To Make lori's quick and easy shepherd pie

1Brown the ground chuck beef and the onion. Drain the fat.

2Add the four cans of veggies (mixed, corn, and green beans), 2 packs of gravy mix and 2 cups cold water. Stir well. Allow the mixture to cook until thick. If it doesn’t thicken, add about 1/4 cup instant potato flakes and it will thicken nicely. If your mixture is too thick (gooey and lumpy), add about 1/2 cup more water.

3Pour mixture into a casserole dish and top with mashed potatoes.

4Top generously with grated cheese.

5Place under broiler until the cheese melts and starts to turn a nice golden brown.
