Lori's Quick and Easy Shepherd Pie

Lori Moore

This is a quick "go to" meal when we are in a hurry. It is a warm, down home, comfort food, and one of my family's favorite dinners.

    whole kernel corn, drained
  • 1 can(s)
    green beans, drained
  • 2 pkg

  • 1 1/2 c

  • ·
instant or fresh mashed potatoes for 8 servings.
  • 1 c

How to Make Lori's Quick and Easy Shepherd Pie

  1. After the ground chuck beef and onion are browned and drained, add the four cans of veggies (mixed, corn, and green beans), two packs of gravy mix, 2 cups cold water. Stir well. Allow the mixture to cook until thick. If it doesn’t thicken, add about 1/4 cup instant potato flakes and it will thicken nicely. If your mixture is too thick (gooey and lumpy, add about 1/2 cup more water.)
  2. Pour mixture into a casserole dish and top with mashed potatoes.
  3. Top generously with grated cheese.
  4. Place under broiler until the cheese melts and starts to turn a nice golden brown.
