lockdown essentials: beggar’s steak pouches

I define this as a “lockdown” recipe; however, in reality I make these pouches all the time. This one was done with steak, but you could use chicken, pork, fish… whatever. It is a fun thing to put together for young and old, and the variations are endless. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 6 - 8 ounces beef, chicken, pork, or seafood, chopped
  • 1 ounce yellow onion, thinly sliced
  • 2 teaspoons tamari sauce, or liquid aminos
  • 1 ounce shredded cheese, your choice
  • 1 tablespoon sweet butter, unsalted
  • salt, kosher variety, to taste
  • black or white pepper, freshly ground, to taste

How To Make lockdown essentials: beggar’s steak pouches

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your ingredients (mise en place).
  • Step 3
    Place a rack in the middle position and preheat the oven to 350f (175c).
  • Step 4
    Chop up your chosen protein, I am using chuck steak.
  • Step 5
    Add it to a bowl with the tamari sauce (liquid aminos), and onions.
  • Step 6
    Let it rest, covered, in the fridge for about an hour, or so.
  • Step 7
    Resting is optional, but it does help all the flavors to blend together.
  • Step 8
    Place on a large piece of parchment paper, and sprinkle with a bit of salt and pepper.
  • Step 9
    Add the cheese and butter.
  • Step 10
    Draw up the sides, and twist into a beggar’s pouch.
  • Step 11
    Place into the preheated oven for 45 – 50 minutes.
  • Step 12
    While it was cooking, I toasted up some bread cubes, and that is what I served it over. But, you could just a easily serve it over rice, or a nice steaming plate of mash potatoes. Mmm mmm mmm.
