lockdown essentials: beggar’s steak pouches
I define this as a “lockdown” recipe; however, in reality I make these pouches all the time. This one was done with steak, but you could use chicken, pork, fish… whatever. It is a fun thing to put together for young and old, and the variations are endless. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 6 - 8 ounces beef, chicken, pork, or seafood, chopped
- 1 ounce yellow onion, thinly sliced
- 2 teaspoons tamari sauce, or liquid aminos
- 1 ounce shredded cheese, your choice
- 1 tablespoon sweet butter, unsalted
- salt, kosher variety, to taste
- black or white pepper, freshly ground, to taste

Step 1PREP/PREPARE

Step 2Gather your ingredients (mise en place).

Step 3Place a rack in the middle position and preheat the oven to 350f (175c).

Step 4Chop up your chosen protein, I am using chuck steak.

Step 5Add it to a bowl with the tamari sauce (liquid aminos), and onions.

Step 6Let it rest, covered, in the fridge for about an hour, or so.

Step 7Resting is optional, but it does help all the flavors to blend together.

Step 8Place on a large piece of parchment paper, and sprinkle with a bit of salt and pepper.

Step 9Add the cheese and butter.

Step 10Draw up the sides, and twist into a beggar’s pouch.

Step 11Place into the preheated oven for 45 – 50 minutes.

Step 12While it was cooking, I toasted up some bread cubes, and that is what I served it over. But, you could just a easily serve it over rice, or a nice steaming plate of mash potatoes. Mmm mmm mmm.
