This is a great alternative to fatty pork breakfast sausage. Even friends who are not trying to limit their fat intake love these yummy patties for breakfast.

I love it because it is easy to make ahead, form into patties and freeze. Just thaw, cook, and serve ... and sit back and enjoy the compliments!

Ingredients

  • 1 lb
    lean ground round
  • 1/2 c
    beef broth
  • 1 tsp
    lemon zest, grated
  • 1 Tbsp
    lemon juice, fresh
  • 4 Tbsp
    dry breadcrumbs
  • 1/4 tsp
    fennel seeds, crushed
  • 1/4 tsp
    salt
  • 1/4 tsp
    ground ginger
  • 1/4 tsp
    rubbed sage
  • 1/4 tsp
    red pepper flakes

How to Make Lean 'N Tasty Beef Breakfast Sausage

Step-by-Step

  1. In a large bowl, combine all ingredients. Mix Well. Cover and let rest 15 minutes.
  2. Shape meat mixture into 8 equal patties.
  3. Coat a large skillet with nonstick cooking spray. Cook patties, working in batches if necessary, over medium-high heat for 5-6 minutes on each side.
  4. Remove patties from skillet and drain on paper towels. Serve hot.
