kim's meatloaf

My family and friends rave over this wonderful meatloaf every time I serve it. In fact, my uncle went back for not only seconds, but thirds as well. It goes great with mashed potatoes and peas on the side, or with a tossed green salad.

Ingredients

  • 1 package 1-1/2 to 2lbs lean ground beef
  • 1 large egg
  • 1 - 15 ounces can del monte diced tomatoes with garlic and onions
  • 1 - sleeve (any brand) saltine crackers, crushed
  • 1 medium onion, diced in 1/2-inch pieces
  • 1/2 large green bell pepper, diced in 1/2-inch pieces
  • 1 large celery stalk, diced in 1/2-inch pieces
  • 1 tablespoon olive oil
  • - morton nature's seasons, to taste

How To Make kim's meatloaf

  • Step 1
    Preheat oven to 350.
  • Step 2
    In 10-inch skillet, add olive oil, onion, green pepper, celery, and Nature's Seasons. Saute just until softened (do not brown).
  • Step 3
    Meanwhile, in large bowl, combine beef, egg, tomatoes, crackers, and Nature's Seasons.
  • Step 4
    Add sauteed vegetables and thoroughly mix all ingredients.
  • Step 5
    Pour mixture into glass loaf pan and spread to edges. Bake 1-1/2 hour(s). ENJOY!
