My family and friends rave over this wonderful meatloaf every time I serve it. In fact, my uncle went back for not only seconds, but thirds as well. It goes great with mashed potatoes and peas on the side, or with a tossed green salad.

Ingredients

1 pkg1-1/2 to 2lbs lean ground beef

1 largeegg

1 - 15 ozcan del monte diced tomatoes with garlic and onions

1sleeve (any brand) saltine crackers, crushed

1 mediumonion, diced in 1/2-inch pieces

1/2 largegreen bell pepper, diced in 1/2-inch pieces

1 largecelery stalk, diced in 1/2-inch pieces

1 Tbspolive oil

·morton nature's seasons, to taste
How to Make Kim's Meatloaf
- Preheat oven to 350.
- In 10-inch skillet, add olive oil, onion, green pepper, celery, and Nature's Seasons. Saute just until softened (do not brown).
- Meanwhile, in large bowl, combine beef, egg, tomatoes, crackers, and Nature's Seasons.
- Add sauteed vegetables and thoroughly mix all ingredients.
- Pour mixture into glass loaf pan and spread to edges. Bake 1-1/2 hour(s). ENJOY!
