I wish I could say this recipe was mine. This chili recipe is from Jenny Bennett

Ingredients

  • 1 1/2 pounds ground beef
  • 1 medium onion diced
  • 3 cups sliced celery
  • 3 cups sliced mushrooms
  • 2 (16 oz. cans hot chili beans
  • 1 (28oz.) can whole stewed tomatoes
  • 2 46(oz.) cans low sodium tomato juice
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground chipotle
  • 1/4 teaspoon cayenne pepper

How To Make jenny's chili

  • Step 1
    In a large stockpot brown the ground beef, drain well. Add the onion and celery and cook over medium high for 5 minutes.
  • Step 2
    Add the mushrooms, beans and stewed tomatoes with the juice from the can.
  • Step 3
    Stir gently so you don't mash the beans.
  • Step 4
    Add the tomato juice and the spices continuing to stir slowly, but thoroughly.
  • Step 5
    Reduce heat cover and simmer for 1 1/2 hours, stirring occasionally.
