Ingredients
- 1 1/2 pounds ground beef
- 1 medium onion diced
- 3 cups sliced celery
- 3 cups sliced mushrooms
- 2 (16 oz. cans hot chili beans
- 1 (28oz.) can whole stewed tomatoes
- 2 46(oz.) cans low sodium tomato juice
- 1 1/2 teaspoons chili powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground chipotle
- 1/4 teaspoon cayenne pepper
How To Make jenny's chili

Step 1In a large stockpot brown the ground beef, drain well. Add the onion and celery and cook over medium high for 5 minutes.

Step 2Add the mushrooms, beans and stewed tomatoes with the juice from the can.

Step 3Stir gently so you don't mash the beans.

Step 4Add the tomato juice and the spices continuing to stir slowly, but thoroughly.

Step 5Reduce heat cover and simmer for 1 1/2 hours, stirring occasionally.
